Raw cacao powder is made from crushed, fermented, and dried cacao beans. Cacao beans are the dried and fully fermented seeds of Theobroma cacao, the cacao tree. The process of making raw cacao powder typically involves cold-pressing unroasted cacao beans, which preserves more of the natural enzymes and nutrients found in the beans compared to traditional cocoa powder.
